Recipe of the Week: Sweet & Simple Pineapple & Coconut Soft-Serve

We’ve made it to March, which means we only have to fantasize about the warmer weather (if you are on the East Coast) for a little while longer— but we can still make the most of these chillier days with a chilly tropical treat. There’s nothing sweeter than ending the night with a (healthy) dessert, and it’s even better when that sweetness is easy to make. What You’ll Need:

  • A large pineapple
  • Can of coconut milk
  • Can opener
  • Freezer
  • Blender

How to Make:

  • Peel and chunk the pineapple and freeze overnight.
  • Add pineapple to blender with ½ cup of coconut milk (work in batches if necessary).
  • Add more milk as you work to get the right texture.
  • Serve in a cold dish!
