RECIPE OF THE WEEK PUMPKIN-BANANA MUFFINS

When it comes to sweets, paleo definitely might leave you feeling limited. But we’re here to tell you that if that there’s a will, there’s a way and thankfully there’s such a thing as Pinterest. Currently, at one full week in on being paleo and I am going to give it to you straight— up until day 3, I was struggling big time.

DON’T LET THE “PALEO FLU” GET TO YOU THOUGH. 

On Day 4 I was asked, “did you get the paleo flu?” Other than being hungry, and slightly agitated, I asked them what exactly they meant. In fact, I was suffering from it– I just didn’t know it. The paleo flu, also known as “low carb flu” results when you drastically reduce your carbohydrate intake.
Symptoms include:

  • Feeling foggy or you might have a terrible headache
  • Irritable and exhausted for no reason
  • Craving everything carbs
  • You’re super hungry
  • Everyday activities seem like a major challenge

Your body is detoxing! Whether you’ve realized it or not, you’ve been stocking your bod with carbs, processed sugars and other foods that aren’t 100% good for you.

The hardest part up until I discovered recipes, such as this one, is that I have a pretty large sweet tooth— larger than I thought. I really enjoyed dessert and now I was trying my best to enjoy frozen blueberries. It obviously wasn’t working. Here’s a recipe I found for Pumpkin-Banana “Muffins”

What You’ll Need:

  • 1 can pure pumpkin puree
  • 2 ripe bananas
  • 1 ½ tbsp. of cinnamon
  • ¼ teas. of nutmeg
  • ¼ teas. of pure vanilla extract

How To Make:

  • In a food processor, combine all of your ingredients
  • Depending on what pan you have, use a mini muffin pan and grease liberally
  • Put mixture into pan
  • Bake for 20 minutes and place into the refrigerator

That’s it! It’s that easy. It’s a simple, sweet treat that won’t have you regretting eating one too many afterward. It may not sound like your typical indulgence, but it’s all about finding creative ways to jazz up “healthy” foods so that they taste like desserts. You can do this! Just do your best to see through the labels we associate desserts with and look to other resources of sweetness!
