If your lunch needs a makeover, you’re in luck— this ridiculously simple, delicious recipe for chicken and hummus wraps might seem like an obvious answer to some, but for others, grilling chicken just to use for a wrap might sound like a lot of work. Truthfully, it’s not— and the taste is so worth the extra few steps! We recommend grilling extra chicken so that you’ll have enough for more lunches throughout the week. It’s nice to have an alternative to the pre-packaged deli meats from the grocery store (your taste buds will think so too!).
WHAT YOU’LL NEED:
- Chicken breast
- Whole wheat tortilla wraps
- Shredded romaine lettuce
- Feta cheese
HOW TO MAKE:
Grill the chicken breasts until thoroughly cooked. While they cool a bit, spread hummus on the inside of your tortilla. Cut the chicken into strips, slices or bite-sized chunks (however you prefer!) and spread onto the wrap along with slices of tomato, onion, and avocado. Top it off with feta and romaine.
You can adapt this however you wish— add ranch dressing or spicy mustard, or make a salad instead of using a wrap. You can even marinade the chicken before you grill it for an extra-flavorful bite.
