RECIPE OF THE WEEK YOUR NEW FAVORITE SNACK, ROASTED CHICKPEAS

If you’re tired of the same old snacks, we have the perfect recipe for you. Chickpeas are packed with protein and have a relatively low calorie count; making them the perfect food to incorporate into your diet wherever you can. Many people don’t like chickpeas— they’re what some call “an acquired taste”. But this, I promise you: put a little bit of olive oil on them and pop them into the oven, and you are going to devour the resulting snack, regardless of your feelings for the raw product.

YOU’LL NEED:

  • 1 tsp. olive oil
  • 1 15 oz. can chickpeas, drained
  • 1 tsp. paprika
  • Salt and pepper to taste

HOW TO MAKE:

Place the drained chickpeas on a paper towel and let them sit for 15—30 minutes. Line a baking sheet with parchment paper, spread chickpeas on the sheet and drizzle with olive oil, rolling to coat. Place in the oven and THEN set the oven to 400 degrees. After about 20 minutes, shake the pan to roll the chickpeas around, then bake for another 5-10 minutes, until the chickpeas are golden-brown. Remove from the oven and roll them in the spices, and enjoy! They store for a few days in an airtight container but they’re best eaten hot.
