Like that slice of pumpkin pie on the morning after Thanksgiving that sends you into an early-morning pondering spiral over this important life question, this recipe for chocolate banana chia seed pudding may do the same. We have good news: The justified answer in this situation is “who cares, especially if it’s healthy” (and it is!). Bananas provide your body with potassium, an important nutrient that helps regulate the rhythm of our heart and keeps the fluid between cells at a normal balance. The chia seeds, while tiny, provide protein, omega-3 fatty acids, and fiber. You don’t have to feel guilty about devouring this sweet morsel.
INGREDIENTS:
- 2 tbsp. almond butter
- 1 ripe banana
- 1 c. unsweetened almond milk (or preferred choice of milk)
- 1 packet Stevia, sugar or preferred sweetener
- 1.2 tsp. cinnamon
- 1 tbsp. cacao nibs
- 1/3 c. chia seeds
- *For a chocolatier taste, toss in a tbsp. of cacao powder!
DIRECTIONS:
Blend everything minus the chia seeds, cacao nibs, and a few slices of banana in a blender. Add in the chia seeds and blend on low for a minute or so. Pour into a bowl (or two, if you want to split it up and enjoy some later— just make sure to keep it in the fridge!). Garnish with banana slices and cacao nibs and enjoy!
